So we made that egg roll in a bowl for the first time last night. We all agreed that it was good and would be added to the meal planning rotation. I’ve attached the recipe for that to the photo.

I had a little bit left over and figured I’d had it for lunch today. I went in to warm it and had an idea. I love a breakfast burrito/quesadilla and so I’ve (possibly) created the first ever Egg Roll In A Bowl Quesadilla!

Now try and keep up…

In a pot with a little bit of extra virgin olive oil and warm through.
2 eggs was perfect for me. You do you though.
Whip together like you’re about to make scrambled eggs.
I put the eggs in with the leftover egg roll mixture and immediately regretted so many of my life choices.
I kept stirring until I could tell the eggs were cooked. At this point it looked…gross.
Couple tortilla wraps and some cheese.
Plopped that mess on top of each of them.
REAL butter in a pan.
Folded over the tortilla on top of itself and put them in the pan.
Golden and crispy!
Sliced them up.
THEY ARE SO GOOD!

So, like, 4/5 ⭐️, would eat again.
